Comfort.  What does comfort look like to you?  Over the past few days, for me, it looked like rooms full of my extended family who all came home for my grandma’s funeral.  It was very comforting to be around all of my grandma’s children, grandkids and great-grandkids.  I was comforted by their presence and our memories and laughter and hugs and promises to stay connected.

Tonight, comfort looks like a mug of hot chamomile tea, steaming beside me as I type.  It was cold and wet and windy today and more than once, my entire head was soaked with spring sleet and heavy, snowy rain.  This comforting herbal tea feels like it is soothing that assault from the weather, sip by sip.  The tea bag is called “Sweet Dreams” and every time I lift my mug, the tag sways back and forth as it hangs outside of the rim….sweet dreams, sweet dreams, sweet dreams.  Comfort.

Tomorrow comfort will look like Baked Oatmeal, around 7am.

1/2 c. oil

1 c. sugar (or maybe hold this back and sprinkle stevia in the morning-depends)

4 eggs

3 1/2 c. oatmeal

1 1/2 T. baking powder

1 tsp salt

2 c. milk

Mix all together.  Set overnight.  Stir and bake at 350degrees for 25 minutes.

Delicious comfort.
